1 cup (225 g) unsalted butter, softened
1 cup brown sugar (packed)
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
1½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon (optional but recommended)
3 cups rolled oats (old-fashioned, not instant)

Instructions
Preheat oven to 180°C / 350°F. Line a baking sheet with parchment paper.
Cream butter and sugars until light and fluffy.
Add eggs and vanilla, mixing until fully combined.
In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
Gradually mix dry ingredients into the wet ingredients.
Fold in oats (and any add-ins). Dough will be thick.
Scoop dough (about 1½ tablespoons each) onto the baking sheet, spacing them apart.
Bake 10–12 minutes, until edges are golden but centers still soft.
Cool on the tray for 5 minutes, then transfer to a rack.
