High-Protein Blueberry Cottage Bake (47g Protein)

Ingredients

  • 1 cup cottage cheese (low-fat or full-fat) – ~25g protein
  • 2 large eggs – ~12g protein
  • ½ cup rolled oats or oat flour – ~5g protein
  • 1 scoop vanilla protein powder – ~20–25g protein
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 1–2 tbsp maple syrup or honey (optional)
  • ¾ cup fresh or frozen blueberries
  • Pinch salt

Optional Toppings

  • Extra blueberries
  • Greek yogurt
  • Honey drizzle
  • Powdered peanut butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend cottage cheese, eggs, oats, protein powder, baking powder, vanilla, salt, and sweetener until smooth.
  3. Fold in blueberries gently.
  4. Pour mixture into a greased small baking dish or ramekin.
  5. Bake 30–35 minutes until set in the center and lightly golden.
  6. Let cool 5–10 minutes, then top with extra berries or yogurt.

💡 Tip: For the fluffy texture like in your image, blend the cottage cheese really smooth and use oat flour instead of whole oats.
