Ingredients

  • 8 oz (225 g) feta cheese, cut into 1-inch cubes
  • ½ cup extra virgin olive oil
  • 1 tsp dried oregano (or a mix of oregano & thyme)
  • ½ tsp crushed red pepper flakes (optional for heat)
  • 1 tsp lemon zest
  • 1 small garlic clove, thinly sliced
  • 4–6 whole peppercorns
  • 1 small rosemary or thyme sprig (fresh)
  • Optional: a few sun-dried tomato pieces or olives for extra flavor

Instructions

  1. Prepare the Feta:
    Cut feta into bite-sized cubes. Pat dry gently with a paper towel to remove excess moisture.
  2. Assemble the Marinade:
    In a clean glass jar or small bowl, add olive oil, herbs, pepper flakes, lemon zest, garlic, and peppercorns. Stir to combine.
  3. Add Feta Cubes:
    Carefully add feta cubes to the jar. Make sure they are fully covered with oil. If needed, add a little more olive oil to submerge them.
  4. Marinate:
    Seal the jar and refrigerate for at least 24 hours — ideally 2–3 days for the best flavor.
  5. Serve:
    Serve the marinated feta cubes with crusty bread, over roasted vegetables, or tossed into salads.
