Ingredients
- 8 oz (225 g) feta cheese, cut into 1-inch cubes
- ½ cup extra virgin olive oil
- 1 tsp dried oregano (or a mix of oregano & thyme)
- ½ tsp crushed red pepper flakes (optional for heat)
- 1 tsp lemon zest
- 1 small garlic clove, thinly sliced
- 4–6 whole peppercorns
- 1 small rosemary or thyme sprig (fresh)
- Optional: a few sun-dried tomato pieces or olives for extra flavor
🥣
Instructions
- Prepare the Feta:
Cut feta into bite-sized cubes. Pat dry gently with a paper towel to remove excess moisture. - Assemble the Marinade:
In a clean glass jar or small bowl, add olive oil, herbs, pepper flakes, lemon zest, garlic, and peppercorns. Stir to combine. - Add Feta Cubes:
Carefully add feta cubes to the jar. Make sure they are fully covered with oil. If needed, add a little more olive oil to submerge them. - Marinate:
Seal the jar and refrigerate for at least 24 hours — ideally 2–3 days for the best flavor. - Serve:
Serve the marinated feta cubes with crusty bread, over roasted vegetables, or tossed into salads.
