Ingredients
- 2 cups rolled oats
- 2 ripe bananas
- 2 eggs
- 1 cup mixed dried fruit (raisins, cranberries, chopped dates, etc.)
Optional (for extra flavor)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ tsp baking powder
- A pinch of salt
Instructions
- Preheat oven to 180°C (350°F). Grease or line a small baking pan.
- Mash the bananas in a large bowl until smooth.
- Add eggs and mix well with the mashed bananas.
- Stir in rolled oats and mixed dried fruit. Mix until evenly combined.
- Pour the mixture into the prepared pan and spread evenly.
- Bake for 30–35 minutes, or until the top is golden and set.
- Let it cool for 10–15 minutes, then slice and serve.
Serving Ideas
- Add Greek yogurt on top
- Drizzle honey or maple syrup
- Serve warm with coffee or tea ☕
