Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas
  • 2 eggs
  • 1 cup mixed dried fruit (raisins, cranberries, chopped dates, etc.)

  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • A pinch of salt

Instructions

  1. Preheat oven to 180°C (350°F). Grease or line a small baking pan.
  2. Mash the bananas in a large bowl until smooth.
  3. Add eggs and mix well with the mashed bananas.
  4. Stir in rolled oats and mixed dried fruit. Mix until evenly combined.
  5. Pour the mixture into the prepared pan and spread evenly.
  6. Bake for 30–35 minutes, or until the top is golden and set.
