Ingredients:

For the Pie Crust:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup psyllium husk powder (for texture)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup cold butter, cubed
  • 1 large egg
  • 1/4 cup cold water (adjust as needed)

For the Filling:

  • 1 lb ground beef (or turkey)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (optional)
  • 1 cup shredded cheddar cheese (or your favorite keto-friendly cheese)
  • 1/2 cup tomato sauce (no sugar added)
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Optional: Sour cream for serving

Instructions:

Step 1: Make the Pie Crust

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, coconut flour, psyllium husk powder, salt, and baking powder.
  3. Add the cold cubed butter and mix until the mixture resembles breadcrumbs. You can use your hands or a pastry cutter to achieve this.
  4. Add the egg and cold water, mixing until the dough comes together. You may need to adjust the amount of water slightly depending on the consistency of the dough.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for about 20-30 minutes to firm up.

Step 2: Prepare the Chili Filling

  1. While the dough chills, heat a large skillet over medium heat and cook the ground beef (or turkey), breaking it apart with a spatula until browned.
  2. Add the diced onion and bell pepper, cooking until softened.
  3. Stir in the tomato sauce, chili powder, garlic powder, paprika, salt, and pepper. Simmer for 5-10 minutes until the mixture thickens slightly.
  4. Remove from heat and stir in the shredded cheese until melted and well combined. Let the mixture cool slightly.

Step 3: Assemble the Hand Pies

  1. Once the dough is chilled, roll it out between two pieces of parchment paper into a thin sheet.
  2. Cut the dough into circles using a round cutter or a glass (about 4 inches in diameter).
  3. Spoon about 1-2 tablespoons of the chili cheese mixture onto the center of each dough circle.
