- 1/3 cup powdered erythritol or keto sweetener
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
- Optional topping: whipped cream + extra lemon zest
Instructions
- Beat the cream
- In a bowl, whip the heavy cream with a mixer until soft peaks form.
- Set aside.
- Mix the base
- In another bowl, beat the cream cheese until smooth.
- Add sweetener, lemon juice, lemon zest, and vanilla.
- Mix until creamy.
- Combine
- Gently fold the whipped cream into the lemon mixture.
- Mix slowly to keep it light and fluffy.
- Chill
- Spoon into serving glasses.
- Refrigerate 30–60 minutes.
- Serve
- Top with whipped cream and lemon zest if desired.
