Keto Philly Cheesesteak Roll Ups

Ingredients:

  • 1 lb ground beef (or thinly sliced steak if you prefer)
  • 1 cup cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone cheese (or additional mozzarella)
  • 1/2 small onion, diced
  • 1/2 cup bell pepper, diced (optional, but adds flavor)
  • 2 tbsp butter (for sautéing)
  • 2 tbsp Worcestershire sauce (optional, for extra flavor)
  • Salt and pepper, to taste
  • 2 large eggs
  • 1 1/2 cups almond flour (for the dough)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp baking powder

Instructions:

  1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Prepare a baking dish by lightly greasing it or lining it with parchment paper.
  2. Cook the Beef:
In a large skillet over medium heat, melt the butter and sauté the diced onions and bell peppers (if using) until softened, about 5 minutes. Add the ground beef to the skillet and cook until browned. Stir in Worcestershire sauce, salt, and pepper. Once the beef is cooked, set the mixture aside to cool.
  3. Prepare the “Dough” for the Roll-Ups:
In a separate mixing bowl, combine the almond flour, garlic powder, onion powder, and baking powder. In another small bowl, whisk the eggs and add them to the almond flour mixture. Stir in the shredded mozzarella and provolone cheese. Mix until you have a dough-like consistency.
  4. Roll Out the Dough:
Lay a piece of parchment paper on your counter and transfer the dough to it. Use a rolling pin to roll the dough out into a thin, rectangle shape, about 1/4 inch thick.
  5. Assemble the Roll-Ups:
Once the dough is rolled out, spread the softened cream cheese evenly over the dough. Then, evenly distribute the cooked beef mixture over the cream cheese layer.
  6. Roll and Slice:
Carefully roll up the dough (like a jelly roll), making sure the filling stays inside. Slice into 6–8 pieces, depending on your preferred size.
  7. Bake:
Arrange the roll-ups in your prepared baking dish. Bake for about 15-20 minutes, or until the tops are golden brown and the cheese is bubbly.
  8. Garnish and Serve:
Once out of the oven, you can garnish the roll-ups with some freshly chopped parsley or extra shredded cheese if you like. Serve warm and enjoy!

Tips:

  • Beef: You can use thinly sliced ribeye or sirloin if you prefer the traditional Philly cheesesteak flavor over ground beef.
  • Cheese Variations: Feel free to experiment with different cheeses like cheddar or gouda for unique flavor twists.
  • Dough: If the dough is too sticky, lightly flour your rolling pin and surface with almond flour to prevent it from sticking.
