Ingredients
- Peels from 1–2 organic lemons, washed well
- 2 cups (500 ml) water
- 1–2 teaspoons honey (optional)
- A slice of fresh lemon (optional)
- Small piece of ginger (optional)
Instructions
- Wash the lemons thoroughly.
- Peel the lemons, avoiding too much of the bitter white pith if desired.
- Bring the water to a boil in a small saucepan.
- Add the lemon peels and reduce to a gentle simmer.
- Simmer for 10–15 minutes.
- Remove from heat and let steep for another 5 minutes.
- Strain into a cup.
- Add honey, lemon juice, or ginger to taste.
