Ingredients:
- Taco-sized flour tortillas (large enough to fold)
- 1 lb ground beef or chicken (or your choice of protein)
- 1 packet taco seasoning (or homemade taco seasoning)
- 1 cup shredded cheese (cheddar, Mexican blend, or your favorite)
- 1/2 cup sour cream (optional)
- 1/4 cup salsa (optional)
- Chopped parsley or cilantro (for garnish)
- Olive oil (for cooking)
Instructions:
- Cook the Meat:
- In a skillet, cook the ground meat (beef or chicken) over medium heat until fully browned and cooked through.
- Drain any excess fat, then add the taco seasoning along with a bit of water (as per the seasoning packet instructions). Stir and let it simmer for a few minutes until the meat is fully flavored and saucy.
- Prepare the Tortillas:
- Lightly heat the tortillas in a pan or microwave so they become more pliable for folding.
- Assemble the Cheesy Tacos:
- Place a tortilla flat on a clean surface.
- Add a generous amount of the seasoned meat mixture in the center of the tortilla.
- Sprinkle a handful of shredded cheese on top of the meat.
- Fold the Tacos:
- Carefully fold the sides of the tortilla inward, then fold up the bottom and top, creating a “pocket” or sealed taco shape.
- Cook the Tacos:
- Heat a little olive oil in a skillet over medium heat.
- Place the folded taco pockets seam-side down in the pan and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese inside is melted.
- Garnish & Serve:
- Once cooked, remove from the skillet and garnish with chopped parsley or cilantro for a fresh touch.
- Serve with a side of sour cream, salsa, or your favorite dipping sauces.
Tips:
- For extra flavor, you can add sautéed onions, peppers, or jalapeños to the meat mixture.
- Feel free to use a blend of cheeses for more richness.
- If you’re using chicken, shredded rotisserie chicken works great for this recipe!
