Old Fashioned Potato Soup

Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 celery stalks, diced
  • 3 cups chicken broth
  • 2 cups milk
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup shredded cheddar cheese (optional)
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • Extra butter for serving

Instructions

  1. In a large pot, combine potatoes, onion, celery, and chicken broth.
  2. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  3. In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  4. Slowly whisk in milk until smooth and thickened.
  5. Pour the milk mixture into the soup pot and stir well.
  6. Add garlic powder, parsley, salt, and pepper.
  7. Stir in cheddar cheese if using, and cook until melted.
  8. Lightly mash some of the potatoes for a thicker texture.
  9. Serve hot with a pat of butter on top.
