Old-School Pecan Dandy

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup finely chopped pecans
  • 1/2 cup caramel bits or caramel squares (chopped)
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Make the Dough:
    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add Flour and Salt:
    Gradually add the all-purpose flour and salt to the butter-sugar mixture, mixing until a soft dough forms.
  4. Add Chopped Pecans:
    Stir in the finely chopped pecans until evenly distributed throughout the dough.
  5. Form the Cookies:
    Scoop teaspoon-sized portions of dough and roll them into small balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten the Cookies:
    Gently press each dough ball flat using the back of a spoon or your fingers. The cookies should be about 1/4 inch thick.
  7. Bake:
    Bake the cookies in the preheated oven for 12-15 minutes or until they are lightly golden on the edges.
  8. Prepare the Caramel:
    While the cookies bake, melt the caramel bits (or chopped caramel squares) in a small saucepan over low heat, stirring constantly until smooth and melted.
  9. Top the Cookies with Caramel and Pecan Mixture:
    Once the cookies are out of the oven, immediately spoon a small amount of melted caramel onto each cookie and top with chopped pecans.
  10. Melt the Chocolate:
    In a microwave-safe bowl, melt the chocolate chips in the microwave in 30-second intervals, stirring until smooth.
  11. Drizzle the Chocolate:
    Drizzle the melted chocolate over the top of each cookie with a spoon or using a piping bag. Allow the cookies to cool completely so the chocolate hardens.
  12. Serve:
    Once the chocolate is set, your Pecan Dandy Do’s are ready to enjoy!
