- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/2 cup finely chopped pecans
- 1/2 cup caramel bits or caramel squares (chopped)
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it. - Make the Dough:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. - Add Flour and Salt:
Gradually add the all-purpose flour and salt to the butter-sugar mixture, mixing until a soft dough forms. - Add Chopped Pecans:
Stir in the finely chopped pecans until evenly distributed throughout the dough. - Form the Cookies:
Scoop teaspoon-sized portions of dough and roll them into small balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. - Flatten the Cookies:
Gently press each dough ball flat using the back of a spoon or your fingers. The cookies should be about 1/4 inch thick. - Bake:
Bake the cookies in the preheated oven for 12-15 minutes or until they are lightly golden on the edges. - Prepare the Caramel:
While the cookies bake, melt the caramel bits (or chopped caramel squares) in a small saucepan over low heat, stirring constantly until smooth and melted. - Top the Cookies with Caramel and Pecan Mixture:
Once the cookies are out of the oven, immediately spoon a small amount of melted caramel onto each cookie and top with chopped pecans. - Melt the Chocolate:
In a microwave-safe bowl, melt the chocolate chips in the microwave in 30-second intervals, stirring until smooth. - Drizzle the Chocolate:
Drizzle the melted chocolate over the top of each cookie with a spoon or using a piping bag. Allow the cookies to cool completely so the chocolate hardens. - Serve:
