Oven-Baked 4-Ingredient Cheesy Potato Stacks

Ingredients

  • 4 medium potatoes (Yukon Gold or Russet)
  • 1–1½ cups shredded cheese (cheddar, mozzarella, or a mix)
  • 3–4 tbsp melted butter (or olive oil)
  • Salt (to taste)

Instructions

  1. Preheat oven
    Set to 375°F (190°C). Lightly grease a muffin tin.
  2. Slice potatoes
    Cut into very thin slices (about 2–3 mm). A mandoline works best.
  3. Season & coat
    In a bowl, toss potato slices with melted butter and salt.
  4. Layer stacks
    • Place a small pile of potato slices into each muffin cup
    • Add a pinch of cheese between layers
    • Finish with cheese on top
  5. Bake
    Bake for 45–55 minutes until:
    • Edges are crispy
    • Tops are golden and bubbly
    • Potatoes are tender inside
  6. Cool & serve
    Let them sit for 5 minutes, then carefully remove and serve.

🔥 Tips

  • Add garlic powder or black pepper for extra flavor (optional but worth it)
  • For crispier edges, use a bit less cheese inside and more on top
  • Parmesan mixed with cheddar = next level
