Raisin Cake Bars

Ingredients:

  • 1 cup raisins
  • 1 cup water
  • ½ cup butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional, but recommended)
  • ½ tsp vanilla extract

👩‍🍳 Instructions:

  1. Cook the raisins
    In a small saucepan, combine raisins and water. Bring to a boil, then simmer for about 5 minutes. Let cool.
  2. Preheat oven
    Set your oven to 180°C (350°F) and grease a square baking pan.
  3. Cream butter & sugar
    In a bowl, beat butter and sugar until light and fluffy.
  4. Add eggs & vanilla
    Mix in eggs one at a time, then add vanilla.
  5. Combine dry ingredients
    In another bowl, whisk flour, baking soda, salt, and cinnamon.
  6. Mix everything together
    Gradually add dry ingredients to the wet mixture.
    Stir in the cooled raisin mixture (including the liquid).
  7. Bake
    Pour batter into the pan and bake for 30–35 minutes or until a toothpick comes out clean.
  8. Cool & slice
    Let it cool completely, then cut into squares.
