Savory Cheese and Spinach Pastry

Ingredients:

  • 1 pack of puff pastry (store-bought or homemade)
  • 200g spinach, chopped
  • 200g feta cheese or cream cheese
  • 1 onion, finely chopped
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • Olive oil (for sautéing)

Instructions:

  1. Preheat the Oven: Preheat your oven to 200°C (400°F).
  2. Sauté the Spinach: Heat olive oil in a pan over medium heat. Add the chopped onions and cook until soft. Add the spinach and cook until wilted. Season with salt and pepper. Remove from heat and allow to cool.
  3. Mix the Filling: In a bowl, combine the cooled spinach mixture with the cheese. Stir until well combined.
  4. Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface. Cut the pastry into rectangles or circles, depending on your preferred shape.
  5. Fill the Pastry: Place a spoonful of the spinach and cheese mixture in the center of each pastry piece.
  6. Seal and Shape: Fold the pastry over the filling to form a half-moon or shape of your choice. Press the edges to seal. Brush the top with beaten egg for a golden finish.
  7. Bake: Place the pastries on a baking tray lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden and crispy.
