Shrimp Scampi Bake

Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 1/4 cup dry white wine or chicken broth
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/4 cup breadcrumbs (plain or panko)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Preheat oven:
    Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Prepare the shrimp:
    Arrange the shrimp in a single layer in the baking dish.
  3. Make the sauce:
    In a bowl, whisk together melted butter, olive oil, garlic, lemon juice, wine (or broth), red pepper flakes, salt, and black pepper.
  4. Pour and top:
    Pour the mixture evenly over the shrimp.
    In a small bowl, mix breadcrumbs, Parmesan, and parsley; sprinkle this evenly on top.
  5. Bake:
    Bake for 12–15 minutes, until the shrimp are pink and opaque and the topping is golden brown.
  6. Serve:
    Garnish with extra parsley and lemon wedges.
    Serve over pasta, rice, or with toasted baguette slices.

Tips

  • Add a pinch of paprika or Old Bay for extra flavor.
  • For a creamier version, stir in a spoonful of heavy cream before baking.
  • Don’t overbake — shrimp cook quickly!
