Slow Cooker Carrot and Potato Mash

Ingredients:

  • 4 medium potatoes (peeled and chopped)
  • 3–4 carrots (peeled and sliced)
  • 2–3 tbsp butter
  • ½ cup milk (or cream for richer texture)
  • 2 cloves garlic (optional, minced)
  • Salt and pepper to taste
  • Optional: fresh herbs (parsley, thyme)

Instructions:

  1. Prep the vegetables
    Peel and chop potatoes and carrots into similar-sized pieces.
  2. Add to slow cooker
    Place everything in the slow cooker. Add a pinch of salt and the garlic if using.
  3. Cook
    • Low: 6–7 hours
    • High: 3–4 hours
      (Until vegetables are very soft)
  4. Mash
    Drain excess liquid if needed. Add butter and milk, then mash until smooth or slightly chunky—your preference.
  5. Season & serve
    Add salt, pepper, and herbs. Top with an extra pat of butter if you like (like in the image).

Tips:

  • For extra flavor: add a splash of olive oil or a bit of grated cheese
  • For a smoother mash: use a hand mixer
  • For a healthier version: replace butter with olive oil and use low-fat milk
