Instructions:
- Preheat Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it. - Prepare Dry Ingredients:
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, garlic powder (if using), and black pepper. Mix until fully combined. - Cut in the Butter:
Add the cubed cold butter to the flour mixture. Use a pastry cutter, two forks, or your hands to cut the butter into the flour until it resembles coarse crumbs with small pea-sized pieces of butter remaining. - Add the Mozzarella Cheese:
Stir in the shredded mozzarella cheese until evenly distributed in the dough mixture. - Add the Milk:
Slowly pour in the milk, stirring gently until the dough just comes together. Do not overmix. - Form the Biscuit Bombs:
Turn the dough onto a lightly floured surface and gently knead it a few times to bring it together. Roll out the dough to about 1-inch thickness. Using a biscuit cutter or a round glass, cut out circles from the dough. - Stuff with Cheese:
Take a portion of the dough and place a small amount of mozzarella cheese in the center. Fold the edges around the cheese and pinch them together to form a ball. - Bake:
Place the biscuit bombs on the prepared baking sheet. Brush the tops with melted butter and sprinkle with a little extra black pepper and mozzarella cheese. - Bake the Biscuits:
Bake in the preheated oven for 12-15 minutes or until the tops are golden brown and the cheese is melted and bubbly. - Serve:
