Spinach and Feta Mini Frittatas

Ingredients:

  • 6 large eggs
  • 1/2 cup milk (whole or skim)
  • 1/2 cup crumbled feta cheese
  • 2 cups fresh spinach, chopped
  • 1 small onion, finely chopped (optional)
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing spinach and onions)
  • Non-stick cooking spray (for greasing the muffin tin)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick cooking spray or line it with muffin liners.
  2. Sauté Vegetables:
    Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic (if using) and sauté for about 3-4 minutes until softened. Add the spinach and cook for another 2-3 minutes until the spinach is wilted. Remove from heat and set aside.
  3. Prepare the Egg Mixture:
    In a bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
  4. Assemble the Frittatas:
    Distribute the sautéed spinach and onion mixture evenly into the muffin tin cups. Then, pour the egg mixture over the vegetables in each cup. Sprinkle the crumbled feta cheese evenly over the top of each frittata.
  5. Bake:
    Bake in the preheated oven for 15-20 minutes, or until the frittatas are set and lightly golden on top. A toothpick inserted into the center should come out clean.
  6. Cool and Serve:
    Let the frittatas cool for a few minutes before removing them from the muffin tin. Serve warm, or store them in an airtight container in the fridge for up to 4 days.
