3–4 medium fresh beets
1 tbsp olive oil (optional)
Salt & pepper to taste
1 tsp lemon juice or vinegar (optional)
Instructions
- Wash the beets thoroughly to remove dirt.
- Boil or roast:
Boil: Place whole beets in a pot, cover with water, and simmer 35–45 minutes until tender.
Roast: Wrap each beet in foil, bake at 200°C (400°F) for 45–60 minutes.
- Let them cool slightly, then peel (the skin slides off easily).
- Slice or cube them.
- Drizzle with olive oil, a little salt, pepper, and lemon juice if desired.
- Serve warm or chilled.
