Ingredients
- 3–4 large potatoes
- 1–2 tablespoons cornstarch (this is the secret!)

Instructions
1. Cut & soak
- Peel (optional) and cut potatoes into fries.
- Soak them in cold water for 20–30 minutes to remove excess starch.
2. Dry well
- Drain and pat completely dry with a towel.

3. Coat with cornstarch
- Sprinkle cornstarch over the fries.
- Toss until evenly coated (light, thin layer).
4. Bake or air-fry
Oven method:
- Preheat oven to 220°C (425°F)
- Line a tray with parchment paper
- Spread fries in a single layer (no overlapping)
- Bake 30–40 minutes, flipping halfway
Air fryer method:
- Cook at 200°C (400°F) for 15–20 minutes
- Shake halfway through
5. Season & serve
- Add salt and spices right after cooking
- Serve hot for best crunch
