This melt-in-your-mouth Sunday dinner recipe is so easy

Ingredients

  • 3–4 lb beef chuck roast
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 packet onion soup mix
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Salt and black pepper to taste

Instructions

  1. Season the roast with salt and pepper.
  2. Heat olive oil in a large skillet and sear the roast on all sides until browned.
  3. Place sliced onions and garlic in the bottom of a slow cooker.
  4. Put the roast on top of the onions.
  5. In a bowl, mix beef broth, onion soup mix, Worcestershire sauce, and brown sugar. Pour over the roast.
  6. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours until the meat is fork-tender.
  7. Remove the roast carefully and keep warm.
  8. Mix cornstarch and water together, stir into the slow cooker juices, and cook a few minutes until thickened into gravy.
  9. Spoon the onion gravy over the roast before serving.
