Ingredients
- 3–4 lb beef chuck roast
- 2 large onions, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup beef broth
- 1 packet onion soup mix
- 2 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 2 tbsp cornstarch
- 2 tbsp water
- Salt and black pepper to taste
Instructions
- Season the roast with salt and pepper.
- Heat olive oil in a large skillet and sear the roast on all sides until browned.
- Place sliced onions and garlic in the bottom of a slow cooker.
- Put the roast on top of the onions.
- In a bowl, mix beef broth, onion soup mix, Worcestershire sauce, and brown sugar. Pour over the roast.
- Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours until the meat is fork-tender.
- Remove the roast carefully and keep warm.
- Mix cornstarch and water together, stir into the slow cooker juices, and cook a few minutes until thickened into gravy.
- Spoon the onion gravy over the roast before serving.
