Ingredients
For the Syrup
- 2 cups sugar
- 1½ cups water
- 1 tbsp lemon juice
- 1 tsp vanilla (optional)
For the Dough
- 1 cup water
- 2 tbsp butter
- 1 tbsp sugar
- 1 cup all-purpose flour
- 2 large eggs
- 1 tbsp semolina (optional, for extra crispiness)
- 1 tsp cornstarch
- Pinch of salt
For Frying
- Vegetable oil
Instructions
1. Prepare the Syrup
- In a saucepan, combine sugar and water.
- Boil for 10 minutes.
- Add lemon juice and simmer 2–3 minutes more.
- Let the syrup cool completely.
2. Make the Dough
- In a pot, combine water, butter, sugar, and salt.
- Bring to a boil.
- Add flour all at once and stir quickly.
- Cook while stirring for 2–3 minutes until a smooth dough forms.
- Remove from heat and let it cool slightly.
- Add eggs one at a time, mixing well.
- Mix in semolina and cornstarch until smooth.
3. Shape the Tulumba
- Transfer dough to a piping bag with a star tip.
- Pipe short strips (3–5 cm).
4. Fry
- Heat oil on medium heat.
- Pipe the dough directly into the oil, cutting with scissors.
- Fry until golden brown and crispy.
5. Syrup Soak
- Remove tulumba from oil.
- Immediately place in cold syrup.
- Let soak 1–2 minutes.
