Turkish Tulumba

Ingredients

For the Syrup

  • 2 cups sugar
  • 1½ cups water
  • 1 tbsp lemon juice
  • 1 tsp vanilla (optional)

For the Dough

  • 1 cup water
  • 2 tbsp butter
  • 1 tbsp sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp semolina (optional, for extra crispiness)
  • 1 tsp cornstarch
  • Pinch of salt

For Frying

  • Vegetable oil

Instructions

1. Prepare the Syrup

  1. In a saucepan, combine sugar and water.
  2. Boil for 10 minutes.
  3. Add lemon juice and simmer 2–3 minutes more.
  4. Let the syrup cool completely.

2. Make the Dough

  1. In a pot, combine water, butter, sugar, and salt.
  2. Bring to a boil.
  3. Add flour all at once and stir quickly.
  4. Cook while stirring for 2–3 minutes until a smooth dough forms.
  5. Remove from heat and let it cool slightly.
  6. Add eggs one at a time, mixing well.
  7. Mix in semolina and cornstarch until smooth.

3. Shape the Tulumba

  1. Transfer dough to a piping bag with a star tip.
  2. Pipe short strips (3–5 cm).

4. Fry

  1. Heat oil on medium heat.
  2. Pipe the dough directly into the oil, cutting with scissors.
  3. Fry until golden brown and crispy.

5. Syrup Soak

  1. Remove tulumba from oil.
  2. Immediately place in cold syrup.
  3. Let soak 1–2 minutes.
