Vegetable Omelet Muffins for Kids Recipe

Ingredients:

  • 2 eggs
  • 1 medium carrot, grated
  • 1/2 cup diced bell peppers (red, green, or yellow)
  • 1/4 cup chopped spinach or other leafy greens (optional)
  • 1/4 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions:
