Ingredients:
- 4 boneless, skinless chicken breasts (or thighs)
- 1/2 cup honey
- 1/4 cup soy sauce (use low sodium if you prefer)
- 4 cloves garlic, minced
- 1/4 cup ketchup
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1/2 tsp red pepper flakes (optional, for a little heat)
- Salt and pepper, to taste
- 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Sesame seeds and chopped green onions (for garnish)
Instructions:
- Place the chicken breasts in the slow cooker.
- In a bowl, whisk together honey, soy sauce, minced garlic, ketchup, vinegar, red pepper flakes, salt, and pepper.
- Pour the sauce over the chicken in the slow cooker.
- Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is cooked through and tender.
- Optional: Remove chicken and keep warm. Pour the sauce into a saucepan, bring to a simmer, and stir in the cornstarch slurry to thicken the sauce.
- Serve the chicken with sauce spooned over the top. Garnish with sesame seeds and chopped green onions.
