Slow Cooker Honey Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1/2 cup honey
  • 1/4 cup soy sauce (use low sodium if you prefer)
  • 4 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1/2 tsp red pepper flakes (optional, for a little heat)
  • Salt and pepper, to taste
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Sesame seeds and chopped green onions (for garnish)

Instructions:

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, whisk together honey, soy sauce, minced garlic, ketchup, vinegar, red pepper flakes, salt, and pepper.
  3. Pour the sauce over the chicken in the slow cooker.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is cooked through and tender.
  5. Optional: Remove chicken and keep warm. Pour the sauce into a saucepan, bring to a simmer, and stir in the cornstarch slurry to thicken the sauce.
  6. Serve the chicken with sauce spooned over the top. Garnish with sesame seeds and chopped green onions.
  7. Great with rice or steamed veggies!
