Ingredients:
- 1 can (20 oz) crushed pineapple, drained well
- 1 packet (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 package (8 oz) graham crackers, crushed
- 1 cup heavy whipping cream (for the topping)
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the crushed graham crackers with 1/4 cup melted butter (optional, for added richness). Stir until the mixture is well combined.
- Press the graham cracker mixture evenly into the bottom of an 8×8-inch or 9×9-inch baking dish lined with parchment paper. Use the back of a spoon to compact it tightly.
- Place the crust in the fridge to set while you prepare the filling.
- Prepare the Filling:
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
- Stir in the drained crushed pineapple until well combined.

- In a separate bowl, whip the heavy whipping cream until stiff peaks form. This will take about 3-4 minutes with an electric mixer.
- Gently fold the whipped cream into the pineapple and cream cheese mixture, blending it until smooth and fluffy.
- Assemble the Squares:
- Spread the pineapple and cream cheese filling evenly over the graham cracker crust in the baking dish.
- Smooth the top with a spatula, then place the dish in the fridge for at least 3-4 hours, or overnight if possible, to allow it to set completely.
- Serve:
