Easy Pineapple Squares: The No-Bake, 4-Ingredient Slice of Sunshine That Disappears in Minutes

Ingredients:

  • 1 can (20 oz) crushed pineapple, drained well
  • 1 packet (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 package (8 oz) graham crackers, crushed
  • 1 cup heavy whipping cream (for the topping)

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the crushed graham crackers with 1/4 cup melted butter (optional, for added richness). Stir until the mixture is well combined.
    • Press the graham cracker mixture evenly into the bottom of an 8×8-inch or 9×9-inch baking dish lined with parchment paper. Use the back of a spoon to compact it tightly.
    • Place the crust in the fridge to set while you prepare the filling.
  2. Prepare the Filling:
    • In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
    • Stir in the drained crushed pineapple until well combined.
  3. Make the Whipped Cream:
    • In a separate bowl, whip the heavy whipping cream until stiff peaks form. This will take about 3-4 minutes with an electric mixer.
    • Gently fold the whipped cream into the pineapple and cream cheese mixture, blending it until smooth and fluffy.
  4. Assemble the Squares:
    • Spread the pineapple and cream cheese filling evenly over the graham cracker crust in the baking dish.
    • Smooth the top with a spatula, then place the dish in the fridge for at least 3-4 hours, or overnight if possible, to allow it to set completely.
  5. Serve:
    • Once set, cut into squares and serve chilled. Enjoy your easy pineapple squares, a refreshing and light dessert that disappears quickly!
