An Absolutely Delicious Italian Meatloaf

Ingredients:

  • 1 1/2 lbs ground beef (you can use a mix of ground beef and pork for added flavor)
  • 1 cup breadcrumbs (preferably Italian breadcrumbs)
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped (or 1 tsp dried basil)
  • 1 tablespoon fresh oregano, chopped (or 1 tsp dried oregano)
  • 1/2 cup milk
  • 1/2 cup marinara sauce (plus extra for topping)
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 1 tablespoon olive oil (for sautéing the onions and garlic)

Instructions:

  1. Prepare the Ingredients:
    • Preheat your oven to 375°F (190°C).
    • In a small pan, heat the olive oil over medium heat. Add the chopped onions and sauté until they become soft and translucent, about 5 minutes. Add the minced garlic and sauté for another 1 minute until fragrant. Remove from heat and set aside to cool.
  2. Mix the Meatloaf:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, grated Parmesan cheese, parsley, basil, oregano, red pepper flakes (if using), milk, sautéed onions and garlic, marinara sauce, salt, and pepper.
    • Use your hands or a spoon to mix everything together until well combined. Be careful not to overmix, as this can make the meatloaf tough.
  3. Shape the Meatloaf:
    • Transfer the mixture to a baking sheet or a baking dish. Shape the mixture into a loaf form, ensuring it’s compact and even. If you like, you can also line the baking sheet with parchment paper for easier cleanup.
  4. Bake the Meatloaf:
    • Bake the meatloaf in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). You can also check doneness by slicing a small piece in the center and making sure it’s fully cooked.
    • About 10 minutes before the meatloaf is done, top it with an extra layer of marinara sauce for added flavor and moisture.
  5. Rest and Serve:
    • Once the meatloaf is cooked, remove it from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and ensures a moist, tender meatloaf.
    • Slice and serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple green salad.

Tips:

  • For extra flavor: Add chopped bell peppers, mushrooms, or zucchini to the meat mixture.
  • Make ahead: You can prepare the meatloaf and refrigerate it overnight before baking for an easy meal the next day.
  • Cheese option: Add a few slices of mozzarella cheese in the center of the meatloaf for a cheesy surprise when you cut into it!
