FRIED POTATOES AND ONIONS

Ingredients:

  • 4-5 medium potatoes, peeled and cut into thick slices or chunks
  • 1 large onion, sliced
  • 2 tablespoons olive oil or butter (or a mix of both)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional)
  • Salt and pepper to taste
  • 1 tablespoon dried thyme (optional)
  • 1 cup diced tomatoes (optional, for extra flavor and moisture)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Peel and slice the potatoes into thick rounds or chunks, depending on your preference. Rinse them in cold water to remove excess starch, then pat dry with a paper towel.
  2. Cook the Potatoes:
    • Heat the olive oil or butter in a large skillet or cast-iron pan over medium heat. Add the potato slices and cook them for about 8-10 minutes, stirring occasionally, until they begin to soften and turn golden on the outside. If necessary, you can cover the pan with a lid to help the potatoes cook through, but remember to stir occasionally to avoid burning.
  3. Add the Onions:
    • Once the potatoes start to soften, add the sliced onions to the pan. Stir to combine with the potatoes. Continue to cook for another 8-10 minutes, stirring occasionally, until both the potatoes and onions are browned and caramelized. You may need to lower the heat to prevent burning.
  4. Season the Potatoes and Onions:
    • Sprinkle in the garlic powder, paprika (if using), salt, and pepper. Stir well to distribute the seasonings evenly.
  5. Add Tomatoes (Optional):
    • If you want a bit of extra moisture and flavor, add the diced tomatoes and stir them in. Let the mixture cook for an additional 5 minutes, allowing the tomatoes to soften and release their juices.
  6. Finish and Serve:
    • Taste and adjust the seasoning if necessary. Once the potatoes and onions are golden, tender, and crispy on the edges, remove the skillet from the heat. Garnish with fresh parsley for a pop of color and added freshness.

Tips:

  • For extra crispy potatoes, you can let them rest in the pan for a few minutes before flipping them or turning them over.
  • You can also add bell peppers, mushrooms, or even some bacon bits for additional flavor and texture.
