Baked Sweet and Sour Chicken

Ingredients

Chicken

  • 2–3 boneless, skinless chicken breasts (cut into bite-size pieces)
  • 1 cup cornstarch
  • 2 eggs (beaten)
  • ¼ cup vegetable oil
  • Salt and pepper to taste

Sweet & Sour Sauce

  • ¾ cup sugar
  • 4 tbsp ketchup
  • ½ cup vinegar (white or apple cider)
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • Optional: ½ cup pineapple chunks or diced bell peppers

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Prepare chicken
    • Season chicken pieces with salt and pepper.
    • Coat each piece in cornstarch, then dip into the beaten eggs.
  3. Pan-fry
    • Heat oil in a skillet over medium-high heat.
    • Fry chicken pieces until lightly golden (not fully cooked).
    • Place the chicken in a greased baking dish.
  4. Make the sauce
    • In a bowl, mix together:
      • sugar
      • ketchup
      • vinegar
      • soy sauce
      • garlic powder
  5. Combine
    • Pour the sauce over the chicken in the baking dish.
    • Add pineapple or bell peppers if using.
  6. Bake
    • Bake for 1 hour, stirring every 15 minutes so the sauce thickens and coats the chicken.

  • Steamed rice
  • Fried rice
  • Stir-fried vegetables
