Meaty Cabbage Soup (Slow Cooker)

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small head cabbage, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 2 medium potatoes, diced
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 1 tbsp Worcestershire sauce (optional)

Instructions

  1. Brown the meat
    • In a skillet over medium heat, cook the ground beef until browned.
    • Drain excess fat.
  2. Add ingredients to slow cooker
    • Place chopped cabbage in the slow cooker.
    • Add cooked beef, carrots, celery, onion, garlic, potatoes, tomatoes, tomato sauce, and broth.
  3. Season
    • Add Italian seasoning, paprika, salt, pepper, and Worcestershire sauce.
  4. Cook
    • Low: 6–7 hours
    • High: 3–4 hours
  5. Serve
    • Stir well before serving.
    • Taste and adjust seasoning if needed.

Optional Add-Ins

  • 1 cup green beans
  • ½ cup rice or barley
  • Red pepper flakes for heat

Tips

  • This soup tastes even better the next day.
  • It freezes very well for meal prep.
  • Top with fresh parsley or grated parmesan for extra flavor.
