Cheesy Potato Fritters

Ingredients:

  • 2 cups grated potatoes (about 2 medium potatoes)
  • 1/2 cup shredded cheddar cheese (or your favorite melty cheese)
  • 1/4 cup parmesan cheese (optional, for extra flavor)
  • 1 small onion, finely chopped or grated
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 2 tbsp chopped parsley (optional)
  • Salt and pepper to taste
  • 1/2 tsp paprika or chili flakes (optional, for a kick)
  • Oil for frying (vegetable, canola, or olive oil)

🥣 Instructions:

  1. Prep the potatoes:
    • Grate the potatoes and place them in a clean kitchen towel.
    • Squeeze out as much moisture as possible. This helps the fritters crisp up!
  2. Mix the batter:
    • In a large bowl, combine the grated potatoes, cheddar, parmesan (if using), onion, garlic, flour, egg, parsley, salt, pepper, and paprika.
    • Mix well until everything is evenly combined.
  3. Form fritters:
    • Scoop about 2 tablespoons of the mixture and flatten slightly into a patty. Repeat with the rest of the mix.
  4. Fry:
    • Heat a few tablespoons of oil in a large skillet over medium heat.
    • Add the fritters, spacing them out, and fry for 3–4 minutes per side or until golden brown and crispy.
    • Drain on paper towels.
  5. Serve:
    • Serve warm with sour cream, ranch, or a spicy dipping sauce.

🔁 Variations:

  • Add chopped scallions, cooked bacon bits, or corn for extra texture.
  • Swap cheddar for mozzarella for an even gooier pull.
  • Make it gluten-free by using chickpea flour or gluten-free flour mix.
