- 1 small onion, finely chopped or grated
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 large egg
- 2 tbsp chopped parsley (optional)
- Salt and pepper to taste
- 1/2 tsp paprika or chili flakes (optional, for a kick)
- Oil for frying (vegetable, canola, or olive oil)

- Prep the potatoes:
- Grate the potatoes and place them in a clean kitchen towel.
- Squeeze out as much moisture as possible. This helps the fritters crisp up!
- Mix the batter:
- In a large bowl, combine the grated potatoes, cheddar, parmesan (if using), onion, garlic, flour, egg, parsley, salt, pepper, and paprika.
- Mix well until everything is evenly combined.
- Form fritters:
- Scoop about 2 tablespoons of the mixture and flatten slightly into a patty. Repeat with the rest of the mix.
- Fry:
- Heat a few tablespoons of oil in a large skillet over medium heat.
- Add the fritters, spacing them out, and fry for 3–4 minutes per side or until golden brown and crispy.
- Drain on paper towels.
- Serve:
- Serve warm with sour cream, ranch, or a spicy dipping sauce.
