Ingredients:
- 2 cups fresh or frozen cranberries
- 1 cup fresh or frozen raspberries
- 1 cup fresh or frozen strawberries (hulled and halved)
- 1 cup sugar
- 1/2 cup orange juice (fresh or bottled)
- 2 tablespoons grated orange zest
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 package (1.75 oz) fruit pectin (like Sure-Jell)
Instructions:
- Prepare the Fruit:
- If you’re using fresh cranberries, raspberries, and strawberries, wash them thoroughly. If using frozen fruit, thaw them slightly before using.
- In a large saucepan, combine the cranberries, raspberries, strawberries, orange juice, and zest. Use a potato masher or fork to crush the fruit gently to release some of the juices.
- Cook the Fruit:
- Bring the fruit mixture to a boil over medium-high heat. Stir occasionally to prevent the fruit from burning. Once the mixture begins to boil, reduce the heat and simmer for about 5 minutes, or until the cranberries begin to pop and break down.
- Add Sugar and Spices:
- Stir in the sugar, lemon juice, cinnamon, and ginger. Continue to cook the mixture on medium heat, stirring until the sugar is completely dissolved and the jam thickens. This may take about 10-15 minutes.
- Add the fruit pectin and stir well to combine. Allow the mixture to simmer for another 5 minutes, until the jam reaches a thicker consistency.
- Test for Doneness:
- To check if the jam is ready, place a spoonful of the jam onto a cold plate. Allow it to sit for a minute, then run your finger through it. If the jam wrinkles and holds its shape, it’s ready for jars.
- If not, continue simmering and test every 5 minutes until it reaches the desired consistency.
- Jar the Jam:
- Sterilize your jars by boiling them in hot water for 5-10 minutes. Remove them carefully with tongs and place them on a clean towel.
- Ladle the hot jam into the jars, leaving about 1/4 inch of space at the top. Wipe the rims of the jars with a clean cloth to ensure no jam is left on the edges.
- Seal the jars with lids and screw on the rings.
- Cool and Store:
- Allow the jam to cool completely at room temperature. You will hear a popping sound as the lids seal, which means the jars are properly sealed.
- Once sealed, store the jam in a cool, dark place. It can be stored for up to a year if unopened. Once opened, refrigerate and use within 3-4 weeks.
Tips:
- Customizable Flavors: You can add other spices like cloves or nutmeg for a unique twist. A splash of vanilla extract can also add depth of flavor.
- Gift Idea: These jars make wonderful gifts! You can decorate the jars with festive ribbons, labels, and a little note for that personal touch.
