Coconut cake in 5 minutes

Ingredients:

  • 1 cup desiccated coconut
  • 1 cup sweetened condensed milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup melted butter
  • 1 egg
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions:

  1. Preheat the Microwave: Set your microwave to high.
  2. Mix Dry Ingredients: In a large bowl, mix together the desiccated coconut, flour, baking powder, and a pinch of salt.
  3. Add Wet Ingredients: Add the sweetened condensed milk, melted butter, egg, and vanilla extract (if using) to the dry ingredients. Stir everything together until smooth and well combined.
  4. Prepare the Baking Dish: Grease a microwave-safe bowl or dish with butter or cooking spray. You can use a round or oval shape for the cake.
  5. Pour the Batter: Pour the coconut batter into the greased dish, smoothing the top evenly.
  6. Microwave the Cake: Microwave the mixture on high for about 3-5 minutes, checking at the 3-minute mark. The cake is ready when it has risen, is golden brown on top, and a toothpick inserted in the center comes out clean.
