Cinnamon Swirl Loaf Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk

For the Cinnamon Swirl:

  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp unsalted butter, melted

For the Glaze:

  • 1/2 cup powdered sugar
  • 1-2 tbsp milk
  • 1/4 tsp vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Prepare Cinnamon Swirl: In a small bowl, combine brown sugar, cinnamon, and melted butter. Set aside.
  3. Make the Cake Batter:
    • In a large mixing bowl, whisk together the flour, baking powder, and salt.
    • In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  4. Assemble the Loaf:
    • Pour half of the cake batter into the prepared loaf pan.
    • Spoon half of the cinnamon swirl mixture over the batter and gently swirl with a knife or spoon.
    • Add the remaining cake batter and top with the rest of the cinnamon swirl mixture. Swirl again.
  5. Bake: Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Prepare the Glaze: While the cake is cooling, mix the powdered sugar, milk, and vanilla extract to form a smooth glaze.
  7. Cool & Glaze: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Drizzle the glaze over the cooled loaf.
