- 1 lb shrimp, peeled and deveined
- 1/2 lb crab meat (preferably lump crab)
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup celery, chopped
- 1/2 cup carrots, finely chopped
- 1/4 cup flour
- 4 cups seafood stock (or chicken stock)
- 1 1/2 cups heavy cream
- 1/2 cup white wine (optional)
- 2 teaspoons Old Bay seasoning
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 teaspoon thyme (fresh or dried)
- Fresh parsley for garnish
- Toasted bread slices (for serving)
Instructions:
- Prepare the Shrimp & Crab:
- Peel and devein the shrimp if not already done. Set aside.
- If using lump crab meat, ensure it’s picked through for any shells and set aside.
- Cook the Vegetables:
- In a large pot, melt butter over medium heat.
- Add the chopped onion, celery, and carrots, sautéing for 5-7 minutes until softened. Add the garlic and cook for another 1 minute until fragrant.
- Make the Roux:
- Sprinkle in the flour and cook, stirring constantly for about 2-3 minutes. This helps thicken the soup.
- Add the Liquids:
- Slowly pour in the seafood stock, stirring continuously to prevent lumps. Add the white wine (if using) and bring to a simmer.
- Reduce heat and simmer for about 10-15 minutes, allowing the soup to thicken slightly.
- Add the Seafood and Spices:
- Add the shrimp and crab meat, Old Bay seasoning, smoked paprika, thyme, salt, and pepper.
- Continue to cook for about 5-7 minutes, or until the shrimp are cooked through and opaque. The seafood will cook quickly.
- Add the Cream:
- Stir in the heavy cream and let it simmer for another 5 minutes. Taste and adjust seasonings as necessary.
- Blend the Bisque (Optional):
- For a smoother texture, you can use an immersion blender to blend the bisque to your desired consistency. If you prefer it chunky, skip this step.
- Serve:
- Ladle the bisque into bowls and garnish with fresh parsley.
- Serve with toasted bread or a crusty baguette on the side.
