Crab and Shrimp Seafood Bisque Recipe

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1/2 lb crab meat (preferably lump crab)
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup flour
  • 4 cups seafood stock (or chicken stock)
  • 1 1/2 cups heavy cream
  • 1/2 cup white wine (optional)
  • 2 teaspoons Old Bay seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 teaspoon thyme (fresh or dried)
  • Fresh parsley for garnish
  • Toasted bread slices (for serving)

Instructions:

  1. Prepare the Shrimp & Crab:
    • Peel and devein the shrimp if not already done. Set aside.
    • If using lump crab meat, ensure it’s picked through for any shells and set aside.
  2. Cook the Vegetables:
    • In a large pot, melt butter over medium heat.
    • Add the chopped onion, celery, and carrots, sautéing for 5-7 minutes until softened. Add the garlic and cook for another 1 minute until fragrant.
  3. Make the Roux:
    • Sprinkle in the flour and cook, stirring constantly for about 2-3 minutes. This helps thicken the soup.
  4. Add the Liquids:
    • Slowly pour in the seafood stock, stirring continuously to prevent lumps. Add the white wine (if using) and bring to a simmer.
    • Reduce heat and simmer for about 10-15 minutes, allowing the soup to thicken slightly.
  5. Add the Seafood and Spices:
    • Add the shrimp and crab meat, Old Bay seasoning, smoked paprika, thyme, salt, and pepper.
    • Continue to cook for about 5-7 minutes, or until the shrimp are cooked through and opaque. The seafood will cook quickly.
  6. Add the Cream:
    • Stir in the heavy cream and let it simmer for another 5 minutes. Taste and adjust seasonings as necessary.
  7. Blend the Bisque (Optional):
    • For a smoother texture, you can use an immersion blender to blend the bisque to your desired consistency. If you prefer it chunky, skip this step.
  8. Serve:
    • Ladle the bisque into bowls and garnish with fresh parsley.
    • Serve with toasted bread or a crusty baguette on the side.
