Cream Cheese Corn Casserole: The Unbelievably Creamy Side Dish That Steals the Show

Ingredients:

  • 2 cans (15 oz each) of whole kernel corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cornbread mix (like Jiffy)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similar-sized casserole dish.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the softened cream cheese, melted butter, sour cream, and milk. Use a hand mixer or whisk to mix until smooth and creamy.
  3. Add Corn and Cornbread Mix: Stir in both types of corn (whole kernel and cream-style), shredded cheddar cheese, cornbread mix, and the optional garlic powder and onion powder. Season with salt and pepper to taste.
  4. Pour into Dish: Pour the mixture into your prepared baking dish, spreading it evenly.
  5. Bake: Place the casserole in the preheated oven and bake for 45–50 minutes, or until the top is golden brown and the casserole is bubbling around the edges.
  6. Serve: Allow the casserole to cool slightly before serving. It will firm up a little as it cools, making it easier to scoop and serve.

Tips:

  • Make Ahead: You can prepare the casserole ahead of time by assembling it and then covering it with plastic wrap and refrigerating it. Bake it the day of your event.
  • Toppings: For added flavor, consider topping it with extra shredded cheese, crispy fried onions, or even bacon bits for a fun twist.
  • Texture Variation: If you prefer a slightly thicker casserole, you can add an extra 1/4 cup of cornbread mix to adjust the consistency.

This casserole is a creamy, comforting dish that will definitely become a favorite at your table!
