Creamy Baked Rice Pudding with Cinnamon

Ingredients:

  • 1 cup long-grain white rice
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp ground cinnamon (for topping)
  • 1/2 tsp ground nutmeg (optional)

Instructions:

Step 1: Prepare the Rice

  1. In a medium saucepan, cook the rice with 2 cups of water according to package instructions (about 15 minutes). Once the rice is cooked, drain any excess water and set it aside to cool.

Step 2: Make the Custard Mixture

  1. Preheat your oven to 325°F (165°C).
  2. In a large mixing bowl, whisk together the eggs, sugar, salt, and vanilla extract until well combined.
  3. In a separate saucepan, combine the milk and heavy cream. Heat over medium heat until it just begins to simmer (do not let it boil).
  4. Gradually pour the hot milk mixture into the egg mixture, whisking constantly to prevent curdling.

Step 3: Combine Rice and Custard

  1. Add the cooked rice to the custard mixture and stir gently to combine.
  2. Pour the mixture into a greased 9×9-inch or 8×8-inch baking dish.

Step 4: Bake the Rice Pudding

  1. Place the baking dish in the oven and bake for about 45-50 minutes, or until the pudding is set and golden brown on top. You can check for doneness by inserting a knife or toothpick in the center — it should come out clean when the pudding is fully baked.
  2. About halfway through the baking process, you can sprinkle a little ground cinnamon or nutmeg on top for extra flavor.

Step 5: Serve

  1. Once baked, remove from the oven and let the rice pudding cool slightly before serving.
  2. Sprinkle with additional cinnamon or nutmeg on top for garnish.
  3. You can serve it warm, or refrigerate it for a few hours if you prefer it chilled.
