- 2 medium zucchinis, sliced into thin rounds
- 1 cup shredded cheese (mozzarella, cheddar, or a mix)
- 2 eggs
- 1/2 cup flour (or almond flour for low-carb option)
- Salt and pepper to taste
- Optional: garlic powder or Italian seasoning for extra flavor
- Oil for frying (olive or sunflower oil works well)

- Prep the zucchini:
Slice zucchini into even thin rounds (not too thin, about 1/4 inch).
Pat dry with paper towels to remove moisture. - Assemble bites:
Place a pinch of shredded cheese between two slices of zucchini to form a little sandwich. Press gently. - Coat for frying:
In one bowl, whisk the eggs with salt, pepper, and optional spices.
Place flour in another shallow dish. - Dip & fry:
Carefully dip each zucchini-cheese sandwich in flour, then coat with egg.
Fry in a preheated skillet with a bit of oil over medium heat, 2–3 minutes per side, until golden and crispy. - Drain & serve:
Remove and place on paper towels to drain excess oil.
