Crispy Zucchini & Cheese Bites

Ingredients:

  • 2 medium zucchinis, sliced into thin rounds
  • 1 cup shredded cheese (mozzarella, cheddar, or a mix)
  • 2 eggs
  • 1/2 cup flour (or almond flour for low-carb option)
  • Salt and pepper to taste
  • Optional: garlic powder or Italian seasoning for extra flavor
  • Oil for frying (olive or sunflower oil works well)

🧑‍🍳 Instructions:

  1. Prep the zucchini:
    Slice zucchini into even thin rounds (not too thin, about 1/4 inch).
    Pat dry with paper towels to remove moisture.
  2. Assemble bites:
    Place a pinch of shredded cheese between two slices of zucchini to form a little sandwich. Press gently.
  3. Coat for frying:
    In one bowl, whisk the eggs with salt, pepper, and optional spices.
    Place flour in another shallow dish.
  4. Dip & fry:
    Carefully dip each zucchini-cheese sandwich in flour, then coat with egg.
    Fry in a preheated skillet with a bit of oil over medium heat, 2–3 minutes per side, until golden and crispy.
  5. Drain & serve:
    Remove and place on paper towels to drain excess oil.
    Serve warm with a dipping sauce like garlic yogurt, sour cream, or marinara!
