- Peels from 4β5 lemons (preferably organic)
- 2 cups water
- 1 to 1Β½ cups sugar (adjust to taste)
- 1 tablespoon lemon juice (optional, for extra tang)

- Prepare the peels
Wash the lemons well and peel them, avoiding too much of the white pith (it can be bitter). Cut peels into small pieces. - Boil
Add the lemon peels and water to a pot. Bring to a boil, then reduce heat and simmer for about 15β20 minutes. - Strain
Remove from heat and strain the liquid into a bowl, pressing the peels to extract all the flavor. - Add sugar
Return the liquid to the pot, add sugar, and stir over low heat until fully dissolved. - Optional boost
Add lemon juice for a brighter flavor. - Cool & bottle
Let it cool, then pour into clean glass bottles or jars. Store in the refrigerator.
