Moroccan Msemen Recipe (Flaky Fried Bread)

Ingredients:

  • Flour – 2 cups
  • Semolina – 1 cup
  • Warm water – 1/2 to 3/4 cup
  • Salt – 1 tsp
  • Sugar – 1 tsp
  • Butter – 1/4 cup, melted
  • Olive oil – 1/4 cup
  • Baking powder – 1/2 tsp
  • Vegetable oil – for frying

Instructions:

  1. Prepare the Dough:
    • In a large bowl, combine the flour, semolina, salt, sugar, and baking powder.
    • Gradually add the warm water, mixing the ingredients together. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
    • Divide the dough into small portions (about 10-12 balls), and shape each into a small round. Cover with a damp cloth and let it rest for about 15-20 minutes.
  2. Shape the Msemen:
    • Take one dough ball and roll it out into a thin rectangle or square (about 8-10 inches wide). The thinner, the better, as it will become crispier.
    • Brush the surface with some melted butter and olive oil.
    • Fold the dough into a square or rectangle, bringing the edges toward the center. Fold again to form a small square packet. Repeat this for all dough balls.
  3. Fry the Msemen:
    • Heat some vegetable oil in a frying pan over medium heat.
    • Place the folded msemen into the pan and fry until golden brown and crispy, turning occasionally to ensure even cooking on both sides.
    • Remove from the pan and drain on paper towels to remove excess oil.
  4. Serve:
    • Msemen is best served warm, often with honey, jam, or as an accompaniment to soup or tea.
