This recipe is absolutely amazing!

Ingredients:

  • Potatoes – 4 large, peeled and boiled
  • Cheddar cheese – 1 cup, shredded
  • Parmesan cheese – 1/4 cup, grated
  • Butter – 2 tbsp, melted
  • Milk – 1/4 cup
  • Eggs – 2 large
  • Flour – 1/2 cup
  • Baking powder – 1 tsp
  • Garlic powder – 1/2 tsp
  • Salt – 1/2 tsp
  • Black pepper – 1/4 tsp
  • Chives – 2 tbsp, chopped (optional)

Instructions:

  1. Prepare the Potatoes:
    • Peel and boil the potatoes until soft (about 15-20 minutes). Drain and mash them well.
  2. Preheat Oven:
    • Preheat your oven to 190°C (375°F). Grease a muffin tin with butter or cooking spray.
  3. Mix Wet Ingredients:
    • In a large bowl, whisk together the eggs, melted butter, and milk until smooth.
  4. Combine Dry Ingredients:
    • In a separate bowl, mix the flour, baking powder, garlic powder, salt, and black pepper.
  5. Mix Potatoes and Cheese:
    • Add the mashed potatoes to the wet mixture and stir until well combined.
    • Fold in the cheddar cheese, parmesan cheese, and chives (if using).
  6. Add Dry Ingredients:
    • Gradually add the dry flour mixture into the wet mixture, stirring until just combined. The batter should be thick but scoopable.
  7. Fill Muffin Tin:
    • Spoon the potato mixture into each muffin cup, filling about 3/4 full. You can top each muffin with a little extra shredded cheese if desired.
  8. Bake:
    • Bake in the preheated oven for about 20-25 minutes or until the tops are golden brown and a toothpick comes out clean.
  9. Serve:
    • Let the muffins cool for a few minutes before serving. Enjoy these cheesy, crispy delights as a side dish or snack!
