- Potatoes – 4 large, peeled and boiled
- Cheddar cheese – 1 cup, shredded
- Parmesan cheese – 1/4 cup, grated

Instructions:
- Prepare the Potatoes:
- Peel and boil the potatoes until soft (about 15-20 minutes). Drain and mash them well.
- Preheat Oven:
- Preheat your oven to 190°C (375°F). Grease a muffin tin with butter or cooking spray.
- Mix Wet Ingredients:
- In a large bowl, whisk together the eggs, melted butter, and milk until smooth.
- Combine Dry Ingredients:
- In a separate bowl, mix the flour, baking powder, garlic powder, salt, and black pepper.
- Mix Potatoes and Cheese:
- Add the mashed potatoes to the wet mixture and stir until well combined.
- Fold in the cheddar cheese, parmesan cheese, and chives (if using).
- Add Dry Ingredients:
- Gradually add the dry flour mixture into the wet mixture, stirring until just combined. The batter should be thick but scoopable.
- Fill Muffin Tin:
- Spoon the potato mixture into each muffin cup, filling about 3/4 full. You can top each muffin with a little extra shredded cheese if desired.
- Bake:
- Bake in the preheated oven for about 20-25 minutes or until the tops are golden brown and a toothpick comes out clean.
- Serve:
