These Potatoes Are Better Than Pizza

Ingredients:

  • 4-5 medium potatoes, peeled and thinly sliced
  • 4 eggs
  • 1 small onion, finely chopped
  • 1/2 cup grated cheese (optional, you can use cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions:

  1. Prepare the potatoes: Heat the olive oil in a large skillet over medium heat. Add the sliced potatoes and cook, stirring occasionally, for about 10 minutes, or until they start to soften. Add the chopped onion and continue cooking for another 5-7 minutes, until the potatoes are tender.
  2. Whisk the eggs: In a bowl, whisk the eggs with salt and pepper. If you like, add the grated cheese to the eggs for extra flavor.
  3. Combine the potatoes and eggs: Pour the egg mixture over the cooked potatoes in the skillet. Stir gently to ensure the eggs cover the potatoes evenly. Allow it to cook on low heat for 5-7 minutes, or until the edges start to set.
  4. Finish cooking: If you want to cook the top evenly, you can cover the skillet with a lid and cook for an additional 5 minutes, or place the skillet under the broiler for 2-3 minutes until the top is golden and slightly crispy.
  5. Serve: Garnish with fresh parsley before serving. Cut into wedges and enjoy your delicious potato frittata!
