Ingredients:
- 2 cups shredded coconut (desiccated coconut)
- 1 cup all-purpose flour
- ½ cup sugar
- ½ cup butter (softened)
- 1 egg
- 1 tsp vanilla extract

- Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
- Cream butter & sugar
In a bowl, mix softened butter and sugar until light and fluffy. - Add wet ingredients
Beat in the egg and vanilla extract. - Mix dry ingredients
In another bowl, combine flour, baking powder, salt, and shredded coconut. - Combine everything
Gradually add the dry mixture into the wet mixture. Mix until a soft dough forms. - Shape cookies
Scoop small portions, roll into balls, and flatten slightly with a fork (like in the picture). - Bake
Bake for 12–15 minutes or until edges are lightly golden. - Cool & serve
Let them cool before serving—they firm up as they cool.

- For extra flavor, lightly toast the coconut before mixing.
- Sprinkle a little sugar on top before baking for a slight crunch.
- You can dip half in melted chocolate for a richer treat.
