Coconut Cookies Recipe

Ingredients:

  • 2 cups shredded coconut (desiccated coconut)
  • 1 cup all-purpose flour
  • ½ cup sugar
  • ½ cup butter (softened)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Cream butter & sugar
    In a bowl, mix softened butter and sugar until light and fluffy.
  3. Add wet ingredients
    Beat in the egg and vanilla extract.
  4. Mix dry ingredients
    In another bowl, combine flour, baking powder, salt, and shredded coconut.
  5. Combine everything
    Gradually add the dry mixture into the wet mixture. Mix until a soft dough forms.
  6. Shape cookies
    Scoop small portions, roll into balls, and flatten slightly with a fork (like in the picture).
  7. Bake
    Bake for 12–15 minutes or until edges are lightly golden.
  8. Cool & serve
    Let them cool before serving—they firm up as they cool.

✨ Tips:

  • For extra flavor, lightly toast the coconut before mixing.
  • Sprinkle a little sugar on top before baking for a slight crunch.
  • You can dip half in melted chocolate for a richer treat.
